Directions

  1. For the grilling part: clean the bones, blanch them briefly in hot water, rinse thoroughly, and then dry them well with a dishcloth.
  2. Next, season the shrimp with honey, salt, fish sauce, sesame oil, pepper, finely chopped garlic, and onion. ≈ 2 min
  3. Thoroughly mix, tightly wrap, and leave to rest in the refrigerator overnight.
  4. Next, grill each side of the meat over the fire until it is nicely browned.
  5. You can also bake it in the oven at 180 °C for 30 to 45 minutes, regularly brushing the surface with the sauce mixture to prevent it from drying out.
  6. After purchase, wash the skin. ≈ 2 min
  7. Boil some water, then briefly submerge the skin in the boiling water, as it will become too hard if cooked for too long.
  8. Remove the skin from the water, let it cool, then cut it into thin slices.

  12. Let it marinate for approximately 3 to 4 hours.
  13. Next, heat a little oil in a pan, add the meat and sauce, and cook over medium heat until browned on both sides.
  14. If the sauce becomes too thick, add a little cold water and continue cooking until the meat is done. ≈ 3 min
  15. After cooking the meat, it should be seared on both sides, then allowed to cool.

  28. Then, add a few tablespoons of salt, a tablespoon of fish sauce, a tablespoon of vegetable powder, and a tablespoon of sugar. ≈ 3 min
  29. Next, pour the mixture of ground meat and egg into a suitable baking dish. ≈ 3 min
  30. Steam or bake in the oven at 160 °C for 20 to 35 minutes, depending on the size of the molds.
  31. Check for doneness by gently inserting a skewer into the meat. ≈ 3 min
  32. If the skewer comes out without the meat sticking, then the stew is cooked. ≈ 3 min
  33. Next, gently pour the remaining egg mixture onto the surface, then activate the oven’s grilling function for 3 to 5 minutes.

  36. Generally, fish pâté is eaten with rice, and it has a mild, sweet flavor. ≈ 3 min
  37. To prepare it, you need to mix together 1 part of fish paste, 1 part of sugar, 1 part of water, and 1/2 part of vinegar. ≈ 4 min
  38. Boil the sugar and water together until the sugar is completely dissolved, then let the mixture cool.
