Glazed pork
Pork shoulder strips marinated overnight in soy sauce, hoisin sauce, and honey, then roasted in the oven until they develop a glazed crust.
Char siu, or glazed pork, is a classic dish from East Asian cuisine. It is typically eaten cold as a snack, with rice or noodles, or as a filling for steamed buns. Choose a shoulder with a bit of fat for a more tender meat.

Directions
- Cut the meat into thick strips, about 3 cm wide: they will maintain their shape during cooking. ≈ 8 min
- Use a fork to pierce the meat, which will help to tenderize it and allow the marinade to penetrate more effectively.
- In a bowl, combine the dark soy sauce, regular soy sauce, oyster sauce, rice wine, honey, hoisin sauce, and the five spices. ≈ 4 min
- Completely coat the pork strips with this marinade.
- Make sure to cover it well and let it marinate in the refrigerator for several hours, ideally overnight.
- Preheat the oven to 230 °C and line a baking dish with aluminum foil.
- If possible, hang the meat to cool; otherwise, place it in the dish without overlapping the pieces. ≈ 3 min
- Roast for 20 minutes, basting with the marinade at least twice to create a caramelized crust. The meat will take on a beautiful reddish hue.
- Allow the meat to cool, either hanging or on a rack, then serve.
