Floating island in the microwave
Whipped whites, cooked in seconds in the microwave, and then arranged in light cubes on top of custard: a light and airy dessert.
The floating island, also known as “snow egg,” combines egg whites and sugar. It is traditionally served on top of custard.

Directions
- Separate the egg whites from the yolks; the yolks can be used to make the custard. ≈ 2 min
- Add a pinch of salt to the egg whites. ≈ 3 min
- Put them in the snow. ≈ 3 min
- Once they are well formed, gradually incorporate the sugar using a spatula. ≈ 4 min
- Heat for approximately 40 seconds in a 900-watt microwave.
- Cut the islands into cubes and arrange them in a custard cup. ≈ 8 min
