- Place the chicken in a pot with salt, cover with cold water, and bring to a gentle simmer over low heat. Cook for about 45 minutes, or until the meat easily separates from the bones.
- Let the soup and carcass cool down.

- Incorporate beaten egg white into the cold broth (this is important). Bring to a boil and strain through a fine-mesh sieve.
