Almond brittle semifreddo
A perfect Italian-style ice cream: egg yolks whipped with sugar and cream, mixed with crunchy, caramelized almonds, then frozen.
This perfectly crisp ice cream is a delicious alternative to traditional desserts. The crunchy texture of the almonds contrasts with the creaminess of the fresh cream, creating a unique and delightful taste experience.

Directions
- In a small saucepan, caramelize 200g of sugar with a tablespoon of water.
- Once the caramel has reached a golden amber color, but not so dark that it burns, turn off the heat and add the almonds. Spread it out on a marble slab or a sheet of parchment paper and let it cool.
- While this is happening, whip the heavy cream until it forms stiff peaks, and beat the egg yolks with the remaining 200g of sugar until they become pale and fluffy.
- Crush the cooled, crispy crackers into small pieces.
- Gently mix the yolks, cream, and crunchy ingredients, pour into a lightly oiled mold, and freeze for at least 8 hours.
