This bread comes from the mountains of Lombardy, where maize flour was much cheaper than wheat. It is known as “pan giallo,” or “yellow bread.”

Directions
- Bring 200g of water to a boil and pour it over the maize semolina in a large bowl. Mix well with a fork and let it cool to room temperature.
- Add the starter, wheat flour, salt, and the remaining water, then knead until a smooth dough forms. Cover with a cloth and let rise for about 8 hours.
- Fold the dough over itself several times, shape it into a ball, and place it on a baking sheet lined with parchment paper. Make two or three cuts on the surface, and let it rise for another hour.
- Preheat the oven to 240 °C (475 °F), lightly spray the bread with water, and bake for 10 minutes. Then, reduce the temperature to 160 °C (325 °F) and continue baking for another 30 minutes.
- Remove from the oven and let cool on a wire rack.
