The pork tenderloin is at its best when cooked quickly on the grill. Here, a citrus-based marinade is followed by a smoky and sweet chipotle and maple glaze.

Directions

  1. Combine the juice and lime zest, garlic, salt, honey, and pepper in a large freezer bag. Add the pork and place it in the refrigerator for 24 hours.
  2. After 24 hours, drain the pork and set aside.
  3. Light the charcoal in a starter chimney, then spread the embers evenly across the bottom of the barbecue. Place the grill grate back on and oil it with a cloth soaked in oil paint.
  4. Place the pork on the hottest part of the grill and cook for 1 minute 30. Rotate it by a quarter turn and continue cooking for 1 minute 30. Repeat this process 12 times, or until the internal temperature reaches 140 °F (60 °C) for a rare finish.
  5. While cooking, combine the chipotles and maple syrup, then set aside. ≈ 4 min
  6. Create an aluminum foil pouch, place the cooked pork inside, pour in the maple syrup mixture, and seal tightly. Let it rest for 15 minutes and serve warm.
