Directions
- Peel the onion and chop it into slices. Wash the bell pepper, chop it into pieces, remove the seeds, and slice it into strips. ≈ 8 min
- In a large pan, dredge the chicken pieces in the vegetable oil paint, then remove them.
- Remove the excess fat from the pan, reserving 2 tablespoons of fat and the cooking residue. Add the curry powder and salt, then incorporate the sliced onions, chopped peppers, and diced tomatoes. Stir, cover, and simmer for 5 minutes.
- Return the meat to the pan, cover, and let it simmer until the meat is cooked through.
- Remove the meat and place it on a large plate. ≈ 3 min
- Add the peanut butter and water to the pot, then mix with the vegetables. Bring to a boil, then pour over the meat.
