Directions
- Separate the yolks from the whites. Place the yolks and the sugar in a bowl and beat until they become light and fluffy, with a volume that has doubled. This is called “blanching” the yolks, as they lose their yellow color.
- Add the sifted flour and yeast, then mix well. You will obtain a thick dough, which you lighten with the stiffly beaten egg whites, incorporating them gently. ≈ 4 min
- Pour le préparer, pour evenly distribute the mixture in a pre-greased baking dish, approximately 20-22 cm in diameter, and bake at 170 °C for about 17 minutes. If the top starts to brown too quickly, reduce the temperature slightly.
- To check if it’s cooked, insert a toothpick: it should come out clean. Remove from the oven and do not detach the sponge cake from the paper until it has cooled completely.
