Directions
- Place the pan over medium heat with all the ingredients and wait for the water to boil and reduce. A syrup begins to form. Stir constantly once it starts to bubble. Gradually, the syrup will thicken and turn into a thicker caramel: a white powder will form, separate from the almonds. Continue to stir until this powder melts back into caramel, which then sticks to the almonds. Play with the pan, removing it from the heat and returning it as needed, depending on whether the caramel is sticking or not: this is the trickiest step, as too much heat will prevent the caramel from adhering.
- Once the almonds are no longer sticking to the pan, remove them and spread them out on a marble surface that has been previously oiled or buttered. Distribute them evenly so that they cool properly.
- Once they have cooled, remove them and store them in a tightly sealed container.
