Turnip and apple gratin with a creamy sauce
A green puree of cabbage and cooked apples, ground into a paste, to be enjoyed with slices of cured ham: a rustic dish from the Cerdanya region.
Trinxat is a rustic Catalan dish made with mashed cabbage and turnips, creating a green puree. It is typically served with ventrèche (a type of pork sausage).

Directions
- Wash the cabbage, remove the tough outer leaves, then blanch and drain it.
- Bring 3 liters of water to a boil, then add the cabbage. Once the water is boiling, add the peeled and chopped apples, salt, and pepper.
- Let it cook for 30 minutes.
- Drain the vegetables and pulse them in a food processor with a fine-mesh blade until they form a smooth, green puree.
- Grill the venison slices and serve them with the mashed potatoes.
