Beef meatballs filled with Chinese sausage, liver, and bacon, grilled on skewers and sprinkled with peanuts and chopped chives oil.
These Vietnamese meatballs contain a filling of sausage, pork liver, and bacon. Once grilled, they are served with peanut sauce and cilantro oil.

Directions
- Combine the ground beef with the nuoc-mâm, sugar, salt, and glutamate, then form approximately 7 meatballs. ≈ 10 min
- Flatten a meatball, place 2 pieces of sausage, liver, and bacon on top, close it up, and roll it into a ball, then skewer it. ≈ 10 min
- When serving, cook until the meatballs are golden brown on all sides, remove the skewers, and arrange on a serving dish.
- Sprinkle with peanuts, then coat with a ciboule-flavored oil paint. ≈ 2 min
- Serve with fish sauce or nuoc-mam, seasoned to your liking, plain or wrapped in a rice pancake with fresh herbs. ≈ 2 min
