Directions
- Bring the coconut water, sugar, and pandan leaves to a boil, stirring until the sugar dissolves and the mixture thickens.
- Add the vanilla extract, then remove the pandan leaves. ≈ 3 min
- Lightly coat the shredded coconut with oil paint in a pan.
- Pour the syrup, then thicken it with the cornstarch mixed in water.
- Keep stirring constantly to ensure the coconut is evenly coated, and continue cooking until the mixture thickens. ≈ 4 min
- Once it’s cooked, transfer it to a bowl. ≈ 3 min
- Form small balls while the mixture is still warm. ≈ 10 min
