This Basque-style sugar pastry, made with butter and lemon zest, is used to make tea biscuits or to fill molds. It is worked in a fountain, without over-kneading.

Directions
- On a work surface or in a mixing bowl, create a well in the sifted flour. ≈ 10 min
- In the center, place the softened butter, sugar, egg yolks, and finely grated lemon zest. ≈ 3 min
- Starting from the center, work gently, gradually incorporating all the ingredients. ≈ 3 min
- Combine everything gently, cover, and refrigerate.
- Once the dough is cold and firm, roll it out on a lightly floured surface to fit a tartlet mold. ≈ 3 min
- For tea biscuits, spread the dough to a thickness of about half a centimetre and cut out the desired shape. ≈ 8 min
- You can also add almonds and sugar, yolks, anise, or other ingredients to create a variety of cookies. ≈ 3 min
- Place on a baking sheet and bake in a preheated oven at 170 °C for about 15 minutes.
