Baked yellow tomato, mozzarella and bacon ramekins
Yellow tomato, mozzarella and smoked bacon broiled in small ramekins: a warm, indulgent appetizer ready in 20 minutes.
“A little appetizer before dinnertime, but I’m starving: yellow tomato, mozza, bacon, mmm!” Ramekins where tomato, mozzarella and bacon bubble together under the broiler.
The bacon lardons are first crisped in a skillet, then placed with the tomato and mozzarella in oiled ramekins flavored with garlic. A few minutes under the broiler is all it takes for the mozzarella to melt and brown.
The same idea also works as little bites on toasted bread.
