White wine Frixuelos, Asturian crêpes
Thin Asturian crêpes made with milk, eggs, and flour, flavored with white wine or anise, and then pan-fried and rolled in sugar.
Frixuelos are traditional Asturian crepes. The basic rule is simple: for one glass of milk, use two eggs. A little white wine or anise flavour the batter, which should remain liquid. They are served sprinkled with sugar.

Directions
- In a tall pot, crack the eggs (for example, 4), and pour in the milk (2 cups). ≈ 3 min
- Add the white wine or anise, then use an immersion blender. ≈ 3 min
- Gradually add the flour until the mixture starts to come together. Do not add too much: the dough should remain liquid. If you add too much flour, add a little milk and mix. ≈ 4 min
- Pour each batch, add a small spoonful of oil paint to a pan and let it heat up thoroughly before adding the mixture, about half a spoonful.
- Spread the dough evenly, tilting the pan on all sides. When it releases, flip the crepe over.
- Once both sides are golden brown, place the crepe on a plate that already has sugar on it. Also, sprinkle sugar over it as you remove it from the pan.
