Directions

  1. Peel and cut the apples into quarters. ≈ 8 min
  2. Wash and finely chop the onion. ≈ 8 min
  3. Heat the olive oil in a saucepan.
  4. Add the onion and cook until it is golden brown. ≈ 3 min
  5. Add the apple slices and cook them for 5 minutes.
  6. Add the water, thyme, and salt. Bring to a boil.
  7. Reduce the heat and let simmer for 30 minutes, or until the root vegetables are tender.
  8. Blend the soup with a blender, or use a knife to achieve a smooth consistency. ≈ 4 min
  9. Wash and finely chop the Belgian endive. ≈ 8 min
  10. Cook the Belgian endive in a small amount of salted water for 1 minute.
