Alpuente’s “ears” are a specialty of Spanish cuisine, particularly popular in mountainous regions. They are steamed and served with a variety of condiments. This recipe will allow you to prepare these delicious ears at home.

Directions
- In a bowl, whisk the 6 eggs. ≈ 4 min
- Add the sifted flour gradually, mixing in small amounts to prevent lumps from forming. ≈ 4 min
- Continue mixing until you achieve a creamy or slightly thick texture. ≈ 4 min
- Prepare a heat-safe dish and pour the dough into it. Sprinkle a little sugar on top. ≈ 3 min
- Use a special, flower-shaped ladle, which you will partially submerge in the cream, about one centimetre deep. ≈ 3 min
- Heat some oil paint in a pan and then use a fork to spread the paste.
- Cook the Alpuente ears until they are golden brown and crispy.
