Directions
- Rinse the almonds in several changes of water and let them soak in the water for 12 hours.
- Rinse thoroughly again and dry. ≈ 2 min
- Grind finely in a mortar or reduce to a powder.
- Add a pinch of cinnamon to this dough and let it rest for 2 hours in a cool place.
- Add the sugar and mix until it is completely dissolved. ≈ 4 min
- Pass the mixture through a metal sieve lined with fabric, to obtain a milky liquid. ≈ 3 min
- Serve very cold, or as a granité (which is like a type of melted ice). ≈ 2 min
- Stir continuously while mixing. ≈ 4 min
