Directions
- Peel the potatoes, cut them into large pieces, and cook them in boiling, salted water with the peeled onions for about twenty minutes, or until they are tender.
- In the meantime, you can prepare the cheese slices. ≈ 3 min
- Gently drain the potatoes and mash them with a potato masher or in a food processor, adding a little of the cooking water if needed. ≈ 2 min
- Add the cream and mix well. ≈ 4 min
- Once the mixture is homogeneous and still warm, quickly add the cheese and stir vigorously with a spoon or wooden spatula. ≈ 4 min
- The texture should be smooth. If you tilt the spoon parallel to the table, a thin layer of puree should run off (see the photo). ≈ 3 min
- Adjust the seasoning with salt and pepper, and, if desired, add finely chopped onion for extra flavor. ≈ 2 min
- It is often served in a hollow dish, as an appetizer or as a main course, accompanied by roasted meats and sausages, and sometimes with a small green salad. ≈ 2 min
