Directions
- First, thoroughly wash and drain the rice. ≈ 2 min
- Next, soak the rice in water for at least 30 minutes so that it expands and cooks properly.
- To marinate the meat, combine in a large bowl yogurt, 1 tablespoon of grated ginger, 1 tablespoon of chopped garlic, a pinch of salt, half a teaspoon of chili powder, and a few slices of fresh chili peppers.
- Mix everything thoroughly. ≈ 4 min
- Next, brush the pieces of meat with this mixture and cover them. ≈ 4 min
- Let it marinate for at least 1 hour.
- For best results, store in the refrigerator.
- Peel the apples (you can keep the small apples whole, but cut the larger ones in half or into four pieces). ≈ 8 min
- Season lightly with salt and pan-fry in a little oil until they are lightly golden. ≈ 2 min
- This will prevent the apples from falling apart during cooking. ≈ 3 min
- Heat oil or ghee in a large, heavy-bottomed pot (suitable for preparing biryani).
- Once the oil paint is warm, add the cloves, cardamom, juniper berries, bay leaves, and pepper. ≈ 3 min

- Once the onion is golden brown, set aside about a quarter (approximately 1/2 cup) for final garnish. ≈ 2 min
- Then add the remaining chopped garlic and ginger, as well as the remaining onion, and cook for another 2 minutes.
- Add the marinated meat and continue to cook over low heat.
- The meat will release water, and once that water has evaporated, add the turmeric, chili pepper, cumin, cilantro, and other spices. ≈ 3 min
- Keep stirring constantly to prevent the spices from burning. ≈ 4 min
- After 5 to 7 minutes of cooking, when the oil paint has risen to the surface, you will know that the spices have been properly incorporated.
- Pour the hot water over the meat (about 2 to 3 cups, ensuring the meat is completely submerged). ≈ 3 min
- Cover and cook over medium heat until the meat is cooked through.
- The cooking time will be longer for the beef, but shorter for the lamb. ≈ 3 min
- When the meat is almost cooked (about 70% done), add the pre-cooked apples and season with salt to your liking. ≈ 2 min
- Continue cooking for a few more minutes, until the root vegetables are slightly tender and the meat is no longer raw. ≈ 3 min

- Determine the amount of meat broth and apple cider: the total amount of liquid should be slightly less than twice the amount of rice (for example, for 3 cups of rice, about 3.5 to 4 cups of liquid).

- The water used to cook the rice must be completely drained.
- Next, add the rice to the broth.

- If you are using powder, dissolve it in a small amount of water and add it at this stage. ≈ 3 min

- Gently warm the milk, then add saffron or saffron powder.
- Spread the milk evenly over the rice. ≈ 4 min
- Then, sprinkle with some fresh chili peppers, a tablespoon of coconut water, and the reserved breadcrumbs. ≈ 2 min
- If you want to enhance the butter flavor, you can add another tablespoon of butter on top. ≈ 3 min
- Make sure the chicken head is completely covered (you can even seal it with flour to prevent steam from escaping).
- Cook over high heat for 5 to 7 minutes, to ensure the inside is fully cooked.
- Next, reduce the heat to low and let it simmer for 25 to 30 minutes.

- After 30 minutes, turn off the heat and wait for another 10 minutes without opening the lid.
- This will ensure that the rice cooks evenly.
- Next, carefully open the lid and gently stir the biryani from bottom to top, so that the rice and meat are well combined. ≈ 4 min
