Directions
- The Allium sativum (garlic) is cooked under its skin, after it has been pre-coated with oil paint and wrapped in cling film, for approximately 45 minutes, until it is tender.
- Once it has cooled, it is pressed through a garlic press.
- In a large pot, combine water, diced apples, cooked garlic, a bouquet of herbs, olive oil, salt, and pepper. ≈ 3 min
- The mixture is brought to a boil, then simmered under a lid for 20 minutes, until the apples are tender.
- We remove the herb bouquet, then blend the broth to create a smooth cream.
- Before serving, the broth is seasoned to taste, poured into bowls, and garnished with grated Gruyère cheese and olive oil.
