Directions
- Boil a very small amount of water (15-60 mL).
- Once the water has started to boil, reduce the heat and begin to incorporate the cold butter into the hot water, using a whisk, a few pieces at a time. Add more butter when the pieces have melted.
- Once you start to see an emulsion forming, you can gradually add more butter. ≈ 3 min
- Continue to add the butter, whisking until you reach the desired amount of whipped butter. ≈ 3 min
