Directions
- Soak the chickpeas in water overnight. After soaking, you will have approximately 4 cups of chickpeas.
- Cook them in 4 liters of water at a high heat for 2 hours, skimming off any foam that forms on the surface regularly.
- Drain the chickpeas, reserving some of the cooking water, and then let them cool for 2 hours.
- Add the tahini, cooking water, salt, lemon juice, crushed garlic, sugar, cumin, and pepper. ≈ 3 min
- Combine everything in a blender and blend until you have a smooth paste. ≈ 4 min
