Directions
- Prepare the vermicelli by soaking them in hot water for a few minutes, then drain them and set them aside. ≈ 2 min
- Cook the shrimp by blanching them in boiling water, and remove them as soon as they turn pink.
- Cook the pork (or squid) until it is cooked through, then let it cool and cut it into thin slices.
- Cut the daikon radish into matchsticks and sprinkle it with sugar to help it dry out a bit, then drain it. ≈ 8 min
- Finely chop the chili pepper, chives, and lemon. ≈ 8 min
- Prepare the sauce by mixing 6 tablespoons of fish sauce, 12 tablespoons of sugar, 6 tablespoons of lemon juice, the chili pepper, chives, and lemon in a blender (or use a food processor). Adjust to your taste. ≈ 3 min
- In a bowl, combine the vermicelli, daikon radish, lemongrass leaves, shrimp, pork (or squid), and sauce. Gradually add the sauce, mixing well to ensure all the ingredients are thoroughly coated. ≈ 4 min
- Serve immediately in individual plates and garnish with chopped chives. ≈ 10 min
