Directions

  1. Remove the shells from the shrimp, but keep the tails. ≈ 2 min
  2. Make an incision on the back to remove the black mesh. ≈ 3 min
  3. Make a small incision in the belly of the shrimp so that they don’t curl up during frying.
  4. Marinate them in salt and calamansi juice.
  5. Mix the egg and cold water, then add the yeast, flour, and salt. Mix well. ≈ 4 min
  6. Place the shrimp in the batter, then fry them in hot oil until they are crispy.
  7. Prepare the sauce: in a small saucepan, bring the water, sugar, ketchup, hot sauce, and salt to a boil.
  8. Mix with the slurry, then serve with the shrimp. ≈ 2 min
