Directions

  1. Prepare a syrup with 100 ml of water and 200 g of sugar, then gradually add the almond flour while stirring. Allow the mixture to rest while preparing the cream.
  2. Prepare a second syrup in a small container with 50 ml of water and 100 g of sugar, then add the beaten egg yolks. Place this container in a large saucepan of water, ensuring that the water does not enter, and heat over a double boiler. Cook without boiling, and remove from the heat as soon as the cream thickens, then let it cool.
  3. Spread the almond paste evenly on a flat surface, cover it completely with powdered sugar, and cut it into squares. Wrap each square around a pencil, with the sugared side facing inwards, to prevent it from sticking, to form cylinders. If desired, mark them with lines using a fork. Coat them again with powdered sugar to make them white. ≈ 8 min
  4. Fill the cylinders with the egg yolk mixture. ≈ 3 min
