Directions
- Place the water and sugar for the syrup on the stove in a pot or electric kettle. ≈ 3 min
- Using a damp brush, gently apply the mixture to the walls to dissolve the small sugar crystals. ≈ 4 min
- Meanwhile, in a large bowl, whisk the egg whites with 100g of sugar until stiff peaks form. ≈ 4 min
- Once the syrup reaches a pouring consistency (110 to 112 °C), slowly pour it into the whipped egg whites, continuing to beat with the mixer. ≈ 4 min
- Add all of the syrup and whisk until the meringue is completely cool.
- If the meringue is intended for decoration, add a little powdered sugar at the end to help it dry further. ≈ 2 min
