Traditional honey cake
A honey-flavored cake infused with strong tea, lemon, cloves, and brandy, baked in two cake molds: a classic recipe from Roch Hachana.

Directions
- Pour the honey, tea, and sugar into the bowl of a mixer and mix well. ≈ 4 min
- Add the eggs, oil paint, lemon juice, and cloves, then mix well. ≈ 4 min
- Add the brandy and baking soda. ≈ 4 min
- While mixing, gradually add the flour, one cup at a time, until no lumps remain: the dough should be liquid but still fairly thick, not watery. ≈ 3 min
- Generously grease two cake molds. ≈ 3 min
- Pour, fill the molds with the batter, leaving about three-quarters of the space empty. ≈ 3 min
- Bake for 50 to 60 minutes at 180 °C. Check with a toothpick towards the end of cooking: it should come out clean.
