Directions
- Cut the duck breast in two equal pieces. ≈ 8 min
- Place the dumplings in a pan, with the fatty side facing down, and cook for 8 minutes over low heat.
- Remove the excess fat, flip the meat, and continue cooking for another 5 minutes.
- Book now. ≈ 3 min
- Deglaze the pan with the cognac, then add the green peppercorns, cream, and veal stock.
- To properly flavor the sauce, crush the green peppercorns. ≈ 4 min
- Let it simmer for 2 minutes over low heat, so that the sauce thickens.
