Directions
- Combine the cream, milk, and egg yolks. ≈ 4 min
- Cut the vanilla pod in half and scrape out the seeds inside. ≈ 8 min
- Mix the seeds with a portion of the sugar, then incorporate everything into the dough. ≈ 4 min
- Pour the batter into ceramic molds (approximately 10 cm in diameter) and place them on a baking rack.
- Bake at 95 degrees Celsius in a convection oven for approximately 2 hours, or until the pastries are fully cooked.
- When you shake the mold, the filling should not crumble too much in the center. ≈ 3 min
- If you don’t have a convection oven, place the molds in a water bath.
- Let them cool completely, then place them in the refrigerator (you can also leave them in the refrigerator overnight).
