Jenang is a specialty dish from Lampung, in southern Sumatra. It is a maize-based porridge made with coconut milk and palm sugar, which is then cut into pieces once it has cooled.

Directions

  1. Grind the corn, add 40 cl of hot water, press and filter to extract the starch. ≈ 8 min
  2. Grate the coconut and extract 40 cl of coconut milk. ≈ 8 min
  3. Combine the maize flour, coconut milk, palm sugar, and salt, then cook until a thick porridge forms.
  4. Spread evenly in a greased and lined baking dish. ≈ 3 min
  5. Once it has cooled, cut it into pieces.
