Directions
- Clean the cod, cut it into pieces, and pat it dry with a clean dishcloth. Lightly dredge the cod in flour. In a pot with some very hot oil, dredge the cod and remove it as soon as it turns golden brown. In the same oil, dredge the garlic and remove it as soon as it turns golden brown, without burning it to avoid making the dish bitter.
- Dice the peeled and chopped apples and coat them in the remaining oil paint. When they start to brown, add the cod, pour in the water, and bring to a boil over high heat for about 10 minutes.
- In a mortar, combine the reserved garlic with some chopped parsley, peeled walnuts, chopped chili pepper, and paprika. Then, incorporate this mixture into the dish. Cook for 5 minutes over low heat. If desired, add two hard-boiled eggs, sliced, before serving.
