Small coconut macarons, easy to make with just eggs, sugar, vanilla, and coconut, piped out using a pastry bag.
Coquitos are small, coconut-flavored macaroons, very simple to make. They are baked on a baking sheet and are ready in about 30 minutes.

Directions
- Preheat the oven to 180 °C.
- Combine all the ingredients in a mixing bowl. ≈ 4 min
- If the dough is too thick to fit into a large mold, add water, one tablespoon at a time, until you achieve a consistency that can be easily scooped. If your eggs are very large, you may not need to add any water.
- Form small mounds on a baking sheet lined with parchment paper. ≈ 3 min
- Bake for 30 minutes at 350 °F (175 °C) in a preheated oven, until cooked through.
