- Separate the egg yolks from the whites, whisk the whites until stiff peaks form, and melt the chocolate in a bowl set over a pot of simmering water (bain-marie).
- Once the chocolate is melted, mix the egg yolks with the chocolate. ≈ 4 min
- After thoroughly mixing, incorporate the protein mixture and mix carefully. ≈ 4 min
- Beat, then mix with the chocolate mixture. ≈ 4 min
- Pour servir, transfer to a serving dish, cover, and refrigerate for 24 hours.
