Vanushak polo is a specialty dish from the city of Kermanshah, in Iran. The ground meat simmers with fresh vanushak (a type of vegetable), fried tomato, and onion, before being served with saffron-infused rice.

Directions
- Cook the meat, the spices (cumin, coriander, and turmeric), and the salt in 350 ml of water. Once the meat is cooked, add the tomato paste and let all the water evaporate.
- Add a little animal fat or olive oil, and the fried onions, then turn off the heat.
- Prepare the rice by cooking it in a pot or in a rice cooker. ≈ 3 min
- Once the rice is cooked, arrange it in a dish and distribute the meat evenly between the layers, or garnish with meat and saffron-infused rice.
