Falafel from soaked chickpeas
Chickpea patties, soaked but uncooked: mixed with tahini, lemon juice, onion, garlic, and spices, then pan-fried, deep-fried, or baked.
The chickpeas used in these falafel are only soaked, never cooked, to preserve their starch content. Mixed with tahini, lemon, and spices, they are formed into patties and then pan-fried, deep-fried, or baked.

- Season with salt, pepper, cumin, and cilantro. ≈ 2 min
- Shape flat, round cakes (about 4 cm in diameter). ≈ 10 min
