Egg white clarified consommé
A very clear consommé, made by clarifying a chicken, veal, or beef broth with egg whites, and flavored with Madeira, port, or cognac.
Consommé is a clear broth. The egg whites, when coagulated, trap all the particles that cloud the liquid, and the filtering process results in a crystal-clear product.

Directions
- Thoroughly degrease the broth, taste it, and add salt if needed. If the consommé is to be served cold, add a little more salt, as cold dishes generally require more seasoning.
- Whisk 1 cup (240 ml) of broth with the egg whites in a large mixing bowl.
- Bring the remaining broth to a simmer in the saucepan.
- While whisking the egg mixture, gradually add the hot broth in a thin stream.
- Then, reverse the mixture in the saucepan and bring to a simmer over medium heat, stirring constantly with a whisk. ≈ 3 min
- As soon as you feel the vibration, stop stirring. ≈ 4 min
- Move the saucepan to the edge of the stove and continue to cook over low heat for 5 minutes.
- Turn the saucepan a quarter turn and let it heat for 5 minutes; repeat twice, every 5 minutes.
- Line a colander with a damp cheesecloth and place it over a salad bowl. ≈ 3 min
- Carefully pour the broth and egg whites into the colander, stirring as little as possible.
- Let it drain for 5 to 6 minutes.
- Remove the colander and add the Madeira or cognac to the consommé. ≈ 4 min
