Azerbaijani-style lamb skewers with apple and onion, prepared in two variations: one with mutton fat, grilled on a barbecue, and the other with herbs.
Kartof kababı is a traditional Azerbaijani dish of skewered potatoes, grilled with lamb fat. Here are two ways to prepare it, with the addition of fresh herbs.

Directions
Apple and lamb fat skewers
- Peel the apples, cut the larger ones into 40-50g pieces, then blanch them for 15-20 seconds in boiling, salted water.
- Cut the lamb fat into 15-20g pieces. Thread them onto skewers, alternating with the apple slices, and grill over the barbecue.
- Garnish the kebab with chopped fresh parsley and onion. ≈ 2 min
A field-dress variation
- Thoroughly wash the apples with their skins on. Pierce them several times with a fork. ≈ 2 min
- Thread them onto skewers and season with salt. You can also place small pieces of lamb fat between them. ≈ 2 min
- Grill the skewers over the embers.
