Biscay-style snails
Escargots cooked in a broth, then topped with a Basque-style sauce made with choricero peppers, onion, and bacon: a hearty and traditional Basque dish.
The Basque sauce, made with choricero peppers, confit red onions, tomatoes, and toasted bread, envelops long-cooked snails in a flavorful broth. The snails are first purged for fifteen days, then cooked in two stages before being mixed with bacon and the sauce.
