A golden oven-baked salmon roast and a colorful rice salad: the fresh supper of July 9, for two.

The salmon is simply rubbed with olive oil, pepper and parsley, surrounded with lemon slices, then baked for 20 minutes at 180 °C. The rice salad is made in the meantime and kept chilled.

Directions

Rice salad

  1. Cook the rice in boiling salted water, then rinse it under cold water.
  2. Once it's cold, add the diced tomato, olives, corn, cubed feta and grated carrot.
  3. Dress with the oil, vinegar, salt and pepper, then refrigerate.

Salmon roast

  1. Preheat the oven to 180 °C.
  2. Rub the salmon with the olive oil, pepper and parsley, and surround it with lemon slices.
  3. Bake for 20 minutes, then serve with the rice salad.
