A hachis parmentier, the French cousin of shepherd's pie, served on the plate with its orange mash and ground meat: the dish of August 31.

The meat cooks with the onions, garlic, tomatoes, a little flour and herbes de Provence, then is bound off the heat with an egg yolk and Parmesan. It's then topped with mash, sprinkled with grated cheese and browned.

The orange carrot and potato mash recalls Axelle's baked mash from August 3.

Directions

  1. Cook the peeled carrots and potatoes in boiling salted water, then mash them.
  2. Chop the onion and garlic and sauté them in the butter until soft.
  3. Add the diced tomatoes, meat, flour, salt, pepper and herbs.
  4. Once everything is cooked, turn off the heat and add the egg yolk and Parmesan. Mix well.
  5. Preheat the oven to 200 °C and spread the meat over the bottom of the dish.
  6. Cover with the mash, sprinkle with grated cheese and brown.
