A chicken and feta quiche, golden from the oven and sprinkled with herbs, with big cubes of feta on top.

The chicken is cut into pieces and browned in a skillet, then spread over the pastry with the feta. The custard is as simple as can be: 3 eggs, 10 cl of cream, salt, pepper and a pinch of curry powder.

The quiche bakes in its parchment paper in a glass dish, so it lifts out easily.

  1. Cut the chicken into pieces and brown it in a skillet.
  2. Whisk the eggs with the cream, season with salt and pepper and add the curry powder.
  3. Line a buttered or parchment-lined pan with the pastry.
  4. Spread the chicken and cubed feta over the pastry.
  5. Pour in the custard and sprinkle with herbs.
  6. Bake for 25 minutes at 240 °C.
