Tex-Mex Beef and Rice with Tomato and Bell Peppers
Beef braised in a Dutch oven with tomato purée, carrots, bell peppers, rice and corn: a complete Tex-Mex style meal, ready in an hour.
Tex-Mex beef and rice, braised in a Dutch oven with tomato, bell peppers, carrots and corn: the plate of September 11, somewhere between risotto and chili.
The meat is browned first, then simmers for 30 minutes with the onions, garlic, paprika, tomato purée and broth. The rice and bell peppers join it for 25 minutes, and the corn goes in at the end.
The rice cooks in the sauce and soaks up all its flavor.

- Cut the meat into 3 to 4 cm cubes.
- Brown it on all sides in hot oil in a Dutch oven, then remove it and sauté the onions.
- Return the meat with the crushed garlic, sprinkle with paprika, pour in the tomato purée, then enough hot water with the bouillon cubes to cover.
- Add the diced carrots and simmer, covered, for 30 minutes.
- Add the rice and the chopped bell peppers, season with salt, pepper and Tabasco, then cook, partly covered, for 25 minutes.
- Add the drained corn and cook for 5 more minutes, uncovered. Sprinkle with parsley just before serving.
