The sauce simmers gently with the tomato purée, a sugar cube (or a carrot) to soften the acidity and a bay leaf. The shrimp and cream only go in for the last fifteen minutes, so they stay tender.

The spaghetti is simply cooked separately and served with the sauce spooned over it.

  1. Sauté the onion, garlic and sliced bell peppers in the olive oil for 5 minutes.
  2. Add the tomato purée, bay leaf and sugar. Season with salt and pepper and cook for 45 minutes over low heat, stirring from time to time.
  3. Fifteen minutes before the end, add the shrimp and cream.
  4. Cook the spaghetti in a large pot of salted water.
  5. Drain the pasta and serve topped with the shrimp sauce.
