« Dessert for tonight after a good lasagna: panna cotta with berry coulis, made with my own two hands! » Six glasses, a nicely set white layer and a bright red coulis.

This panna cotta is made with mascarpone melted into vanilla-infused milk, sweetened, then set with gelatin. For the coulis, the berries release their juice with the sugar and lemon before being blended.

Serve it in clear glasses, with the coulis poured over at the last minute.

Panna cotta

  1. Soften the gelatin in cold water.
  2. Gently heat the milk with the split and scraped vanilla bean.
  3. Add the mascarpone and stir until it melts, then add the sugar. Stop just before it boils.
  4. Add the squeezed-out gelatin, stir and let steep for 5 minutes.
  5. Pour into glasses and refrigerate until set.

Coulis

  1. Let the berries release their juice with the sugar and lemon juice, then blend.
  2. Pour the coulis over the panna cotta just before serving.

  • 1 vanilla bean
  • 400 g mixed berries
  • 50 g sugar
  • 1 lemon
