Making your own ravioli takes a little time, but nothing complicated: the dough rests while the sauce pressure cooks, then all that's left is to fill, seal and poach the ravioli for a few minutes. The merguez sausages give the tomato sauce a gentle kick that goes beautifully with the mild ham.
A festive dinner for four, finished with a generous shower of Parmesan.

Directions
Dough
- Mix the flour, salt, eggs and oil, then knead for 8 to 10 minutes until smooth.
- Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
Sauce in the Cookeo
- Cut the merguez into 2 cm slices, slice the onion and mince the garlic.
- In Brown mode, sauté the merguez, onion and garlic in the olive oil for 5 minutes.
- Add the tomato purée, tomato paste and herbs, stir, close the lid and pressure cook for 10 minutes.
Filling and ravioli
- Finely chop the prosciutto and mix it with the ricotta and Parmesan. Season with pepper.
- Roll the dough out very thin into two strips of the same size.
- Place small mounds of filling every 4 cm on one strip, moisten the dough around them and cover with the second strip.
- Press out the air around the filling, seal with your fingers and cut out the ravioli with a pastry wheel.
Cooking and serving
- Cook the ravioli for 3 to 4 minutes in a large pot of boiling salted water, then drain them gently.
- Spoon the merguez tomato sauce over them and sprinkle with grated Parmesan. Serve right away.
