Belgian endive with ground meat, cooked in the same pot as the potatoes: a simple Belgian dish that Axelle made twice this summer (on July 20 and September 17).

The ground meat and red onion brown first in a little olive oil and butter, then the sliced endives, potatoes and bay leaves join them for 25 to 30 minutes over medium heat.

The original recipe mashes everything together; Axelle keeps it chunky, as you can see in the photos.

  1. Brown the ground meat and red onion in the olive oil and butter, then season with salt and pepper.
  2. Add the sliced endives, the potatoes cut into chunks and the bay leaves. Season again with salt and pepper.
  3. Cook for 25 to 30 minutes over medium heat, until the potatoes are tender.

  • 1 red onion
  • 5 waxy potatoes
  • 1 tbsp olive oil
  • 1 knob butter
  • 3 bay leaves
