The apples are cut into thin slices and arranged on the pastry, then covered with a mixture of eggs, crème fraîche and sugar. Thirty minutes in the oven, and the custard takes on a lovely caramel color.

  1. Peel the apples and cut them into thin slices.
  2. In a mixing bowl, combine the sugar, eggs, vanilla sugar and crème fraîche.
  3. Line a pan with the pastry and prick the bottom with a fork.
  4. Arrange the apples on the pastry and pour the custard over them.
  5. Bake for about 30 minutes, until the tart is nicely golden.
