Clean-Out-the-Fridge Quiche with Goat Cheese and Bacon
Clean-out-the-fridge quiche: goat cheese rounds, bacon, leftover vegetables and deli meats, 3 eggs and cream. Zero cost, zero waste.
« A quick, tasty supper for zero euros: fridge leftovers, cheese, vegetables, deli meats, a little imagination and voilà, a quiche! » That's how Axelle sums up this leftovers quiche.
The base comes from a classic goat cheese and bacon quiche: a pastry crust, a log of goat cheese sliced into rounds, 200 g of bacon lardons, 3 eggs and 20 cl of cream. Anything left in the fridge (vegetables, odds and ends of deli meats) can go in too.

Directions
- Preheat the oven to 150 °C.
- Line a tart pan with the pastry and prick it with a fork.
- Sauté the lardons (and any leftover vegetables) and spread them over the pastry.
- Beat the eggs with the cream, salt and pepper, then pour over the filling.
- Arrange the goat cheese rounds on top and sprinkle with thyme.
- Bake for 30 minutes.
